Danzai noodles
Danzai noodles is one of the traditional street food that you have to try when you visit Tainan. The word "Danzai" is shoulder pole; in the past, people shouldered a pole to sell noodles. There were containers on the both side of the pole; vendors put the stuff such as utensils and ingredients on one side, and there is a pot of broth on the other. There are three features of Danzai noodles: yellow noodles, braised minced pork and shrimp. First, let's talk about yellow noodles. People in Tainan usually use yellow noodles, if you go to try other kinds of noodles like 土魠魚羹麵 or魯麵, you'll also see that yellow noodles are added in it. Braised minced pork is the spirit of Danzai noodles and also one of the highlights when you sample traditional Tainan street food.Every traditional restaurant has their own special recipe for braised minced pork which is usually added in different kinds of dishes like braised pork rice, noodles or even boiled vegetables. Sometimes we could also consider the braised minced pork as the trump card of the restaurants in Tainan. The last but not the least one is the shrimp. You could not call noodles "Danzai noodles" without a shrimp. The shrimp not only makes the bowl of noodles more colorful, but makes the broth more flavorful.Tu Hsiao Yueh Danzai noodles (度小月擔仔麵)
The owner of Tu Hsiao Yueh Danzai noodles is the descendant of Hung Yu Tou (洪芋頭), who is the people making Danzai noodles famous in Tainan. The restaurants Tu Hsiao Yueh Danzai noodles a tradition and modern fusion. The traditional ways of cooking the noodles is still preserved. Walking into the restaurant,you could see a cook sit at a low bench cooking noodles. You would feel like you are eating in a old style restaurants while enjoy the clean and comfortable atmosphere of the restaurants.A bowl of yellow noodles with a scoop of braised mince pork and broth, finally topped with a shrimp. Danzai noodles isn't for meal, but serves as dessert instead. Next time when you visit Tainan, don't forget to have a bowl of Danzai noodles. Just take a seat and enjoy the delicious street food and lifestyle in Tainan.
